In order to evaluate water hyacinth (Eichhornia crassipes L.) as a potential feed for pigs two experiments were carried out to determine the yield and chemical composition and the effect of water hyacinth supplementation on pig performance. Experiment 1 was carried out at My Hoà in Long Xuyen City to determine the biomass production and chemical composition of water hyacinth (WH) grown in different environments and with different seeding methods. The trial included two factors and had a completely randomized design. Factor A was water environment (river or pond) and factor B was seeding method (new plants or regeneration). Each treatment was replicated three times. Water environment did not affect WH yield, ether extract and ash content of WH leaves. However, WH grown in ponds contained more crude protein (CP) and neutral detergent fiber (NDF) than that grown in the river. Conversely, CP of WH stem grown in the river was higher than that grown in ponds. A second experiment was carried out in order to determine the effect of cooking the fresh leaves and stems of WH and including them as a supplement in commercial concentrate diets for fattening-finishing pigs (57 - 100 kg). The trial was carried out using Yorkshire pigs kept in the Experimental Animal Farm, Can Tho University. Twenty pigs were individually housed and fed and were allocated in a completely randomized design to 5 treatments and 4 replications. The treatments were as follows: 1: Control, a commercial concentrate; 2: Concentrate + fresh leaves ad libitum; 3: Concentrate + fresh stems ad libitum; 4: Concentrate + cooked leaves ad libitum; 5: Concentrate + cooked stems ad libitum. Cooking the fresh leaves and stems of WH did not affect performance and feed efficiency of the pigs. Concentrate intake from 57 to 76kg live weight was positively related with WH intake, that means that if fattening pigs are given WH ad libitum they will automatically regulate intake in order that concentrate intake is maximized. In the live weight range from 77 - 100 kg, including WH in the diet did not affect feed intake.
